Sweet Potato Casserole
Makes 10 to 12 servings
7 cups warm mashed cooked sweet potatoes (about 7 medium)
1/2 cup (1 stick) butter
1/2 cup sugar
1 TBS orange zest (optional)
1/2 tsp ground cinnamon
1/2 tsp salt
1 cup firmly packed brown sugar
1 cup finely chopped pecans
1/2 cup all purpose flour
1/4 cup (1/2 stick) butter, melted
Preheat oven to 350 degrees. Lightly grease a 13x9x2 inch baking dish.
In a large bowl, combine potatoes, butter, sugar, zest, cinnamon and salt. Spoon into prepared baking dish.
In a small bowl, combine brown sugar, pecans, flour and melted butter. Sprinkle mixture evenly over casserole. Bake 35 to 45 minutes, or until hot and bubbly.
